I love eating food. I love cooking food. I love grocery shopping. I love talking to the butcher or farmer about where their produce came from. I love seeing the passion and creativity that a chef uses to turn a few simple ingredients into a work of art. I love how I feel after eating a great meal with family and friends. Pretty much the only thing I don’t like about food is doing the dishes!
For most of us, we work in a corporate office at a desk from 9-5, Monday thru Friday, with an hour break for lunch. Maybe you work shift work or you’re one of the lucky ones that makes your own hours. Regardless of what your schedule is, we spend a helluva lot of time working and it’s easy to forget about the little things…like eating and taking care of our bodies! So I went to the Design Exchange for the first time on Sunday and despite the exhibition’s warning that “it will not make you happier”, it did, in fact, make me happier. Now while my work mainly deals with nutrition it also involves a holistic approach which means addressing big picture stuff. And the big picture reaches far beyond the foods we consume. I work with my clients on issues like sleep quality, self-image, confidence, stress levels, relationship satisfaction and, of course, overall happiness*.
So I watched the Super Bowl last night. Like really watched it. I didn’t just have it on in the background. I was seriously invested in it! This is a pretty big deal because I’m the least likely American football fan there is. But I have to say, I kind of enjoyed it. I made a very untraditional Super Bowl dinner including caprese wraps and a hearty pasta sauce of peppers, mushrooms, tomatoes, shallots and red wine poured over kamut noodles. No wings, no nachos, no pizza and no beer. And I was cool with that because I feel like a million bucks today. But I know some aren’t feeling quite as hot and think this would be a great time to introduce my favourite cleansing program.
I’ve got to apologize for the lack of blogging that’s occurred over the last few months. The holiday season was a busy one for me and while I recommend that you all take “me” time for yourself every day I admit that I wasn’t heeding my own advice. So I basically backlogged a whole bunch of “me” time to focus on myself and my family. Also there’s this little called writer’s block and I was definitely suffering from it. Now that that’s out of the way let’s get to the point of this blog: FOOD! Starting the first post of the new year off with fish cakes! Yummy, yummy fish cakes. These bad boys are wheat-free and egg-free. Yay for all those suffering from allergies. Oh, and they’re straight up delicious! Let’s get to it…
This chicken salad is a healthier version of the mayo-laden, ranch-filled (and consequently preservative-filled) salads we’re accustomed to. It’s light yet filling at the same time and grain-free and Paleo friendly. The organic yogurt gives you a wonderful dose of probiotics. If you’re off dairy more and more stores are starting to sell almond milk and coconut milk yogurt so you can substitute for one of those. Poaching chicken is a healthy way to prepare meat and, if done properly, results in tender and juicy chicken. Those short on time (aren’t we all?) will be a fan that the whole meal takes about 25-30 minutes to make (including both prep and cooking times). Gotta love those quickies!
